This performative dinner was drawn out of my earlier piece ‘Friends Who Ferment’ - a quilted piece made up of fermented textile patches sent to me by friends and friends of friends, pieces of their own travelling ferments.&#38;nbsp;‘Friends Who Ferment’ was exhibited at Aquela Kombucha factory in Porto in October-November 2023.&#38;nbsp;To mark the opening of the exhibition, the artist Inês Neto dos Santos collaborated with Aquela Kombucha to create a dinner-performance, which unfolded the stories and infinite edible, social and emotional possibilities of the work on show.

Weaving a web of interrelationships,&#38;nbsp; this performance was constructed not only through food, but also through objects, readings, meditations and performative gestures. ‘Friends Who Ferment’ tells us stories from various personal, cultural and historical worlds - inevitably demonstrating that fermentation unfolds ‘culture’ in various meanings: bacterial, social, artistic. In this dinner-performance, we crossed borders with these fermented cloths, travelling with the whole world in our pockets. Together, we&#38;nbsp; opened a portal to a deeper understanding of our existence as multi-species beings. Fermentation extended from the kitchen to the artist's studio; from what we eat to what we smell, touch and wear; from a distant landscape to the asphalt on our streets, travelling through space and time.

An ongoing re-shaping,&#38;nbsp;reconfiguring, re-dyeing, ripping and sewing back together again, fermenting, dissolving, melting, digesting.
‘Unfurling’ is a piece the artists has exhibited a many times and it is never the same. The fabrics are re-dyed with whatever plants and pigments are in season, jars filled with whatever needs fermenting, new pieces of dry scoby, soda made of whatever fruit is going, bread and butter made fresh to share. It’s a table with two seats, an invitation to share time with creatures other than ourselves. It sits seemingly still until the exhibition ends but in fact, is brimming with micro-activity, jars bubbling, colours fading. Someone stirs the soda every other day.

2023‘Yoghurt Jacket’ is a travelling, wearable sculpture, inspired by stories of travellers and migrants travelling with dry ferments in their pockets - pieces of cloth embedded with starters for bread, cheese, yoghurt… preserved indefinitely, ready to be reawakened wherever they end up. Dirty cloths to outside eyes, but, in reality, portals into a whole world. &#38;nbsp;

Yoghurt jacket is lined with dry yoghurt&#38;nbsp; - dormant yeasts await reawakening,&#38;nbsp; ready to unfold into many yoghurts. This piece serves as warm shelter and source of sustenance, filled with possibilities for multiplication and renewal. What you take out, you can add back in again, in perpetuity.
The yoghurt lining this piece was sent to me Petar Sapundjiev on a piece of his grandmothers cotton cloth, which she used for ironing. I warmed it back to life, used it to make my own yoghurt and dried it again, spread all over the inside of this quilted piece.

Cantemos o feijão was a collective gesture, performed at Marc Leiber’s Agroforest in Quinta das Abelhas, as part of the 2022 edition of Ponto d’Orvalho festival in Montemor-o-Novo, Portugal.&#38;nbsp;The audience is invited to collectively peel and mash beans, to then be eaten with bread and olive oil - a collective gesture accompanied&#38;nbsp;by Cante Alentejano, traditional folk singing from Alentejo, performed by female choir Ecos do Monte. This work derives from the artist’s research around the collaborative and recirpocal properties of bean plants, and speaks of the importance of multi-species entanglements in the breaking down of the culture-nature binome.&#38;nbsp;
Cante Alentejano is a tradition of folk singing from Alentejo in Portugal, originated from agricultural workers whom, faced with arduous and repetetive tasks in the fields, found ways to gather rhythm through song, as well as push away the fatigue and intensity of agricultural labour. Cante Alentejano opened up space for people, often those who could neither read nor write, to tell stories, register the seasons, and learn from each other. To find joy in hard labour, and relate to one another and their surroundings. Cante Alentejano is a political gesture, weaving a variety of threads between landscape, time, culture and survival.&#38;nbsp;
This collective gesture was preceded by a workshop on the making of amulets, considering them as temporary objects, capable of shifting, adapting to present needs and urgencies.

		<description>FRIENDS WHO FERMENT
2022“Friends who ferment” is a piece inspired by stories of travellers and migrants travelling with dry ferments in their pockets - pieces of cloth embedded with starters for bread, cheese, yoghurt… preserved indefinitely, ready to be reawakened wherever they end up.&#38;nbsp; Dirty cloths to outside eyes, but, in reality, portals into a whole world.
This quilt is made up of fermented patches sent to me by friends and friends of friends, pieces of their own travelling ferments. It may warm your legs, or provide you with a whole meal; a pooling together of resources, a possibility for cyclical sustenance, a warm shelter. What you take out, you can add back in again, in perpetuity.

2021a short film by Bella Riza and Inês Neto dos Santos

𝘉𝘦𝘢𝘯𝘴, 𝘙𝘪𝘯𝘴𝘦𝘥 𝘛𝘸𝘪𝘤𝘦 follows tales, histories, memories and recipes tied up in a bean. How many stories can a recipe tell? And who do these stories belong to?

Through the personal and historical symbolism of a bean – and, consequently, the process of growing, harvesting and cooking this seed – the film will move between the collaborators’ own memories (in all their factual/fabricated dimensions), expanding on to speak of how we carry multiple places within us, the value of tacit knowledge and the possibilities for a reciprocal language of care.

Production LOOP Barcelona. Co-financed with funds from the Creative Europe Program and the project A-PLACE. Linking places through networked artistic practices.

Developed while in residence at Unit 1 Gallery &#124; Workshop, as part of the Radical Residency V

After (the first) lockdown in 2020, I spent a hopeful August in residence at Unit 1 Gallery &#124; Workshop, as part of their Radical Residency programme. I went in with the intention to consider permanence and longevity, to think about object-making in my ephemeral practice and how food and plants can be used as sustainable materials. Inevitably started by making bread, fermenting vegetables into sauerkraut and fruit into kvass, churning cream into butter - microbial portraits of the place and time we found ourselves in. Forever concerned with collaborations, symbiosis ad circularity, I approached object making as I would cooking - a vehicle for metaphor, for things bigger than themselves, as reflections of the surrounding environment. Fabrics dyed with neighbouring plants and kitchen waste, tiny beeswax sculptures, dried SCOBY sheets... objects and materials with many layers of living.In this line of thinking, I made tiny statues to fava beans. Starting in wax, then clay, then bronze, small sculptures to be held and carried in our pockets, weighty reminders of the importance of regenerative, symbiotic practices, of supported sustenance, of what actually really holds us together.&#38;nbsp;‘Favas, fresh out of their pods, sold cosy in see-through plastic bags at the saturday market. Mum would cook them with chouriço (well, an onion first, and lots of olive oil, salt - what is a stew without them to start), juicy with a pinch of tomato. They’d cook slowly in the pressure cooker - the kitchen gadget most fascinating and horrifying to little-year old me (still is). A singing jet of white steam signalled their full tenderness, habemus fava!’(𝒕𝒐 𝒃𝒆 𝒄𝒐𝒏𝒕𝒊𝒏𝒖𝒆𝒅).One of the first crops to be domesticated by humans in/around Mesopotamia, as early as 6000 BC (as einkorn, emmer, barley, peas and lentils), fava are hearty, calorie and nutrient-dense, easy and cheap to grow. They’ll thrive in harsh conditions, survive cold climates and do well in high salinity or clay-rich soils. The fava plant has historically been used as a cover crop over winter, protecting soil from erosion and regenerating it, with the help of nitrogen-fixing bacteria. It’s no wonder fava, and other pulses, are the base of so many cuisines. Low cost and high caloric yield, the building blocks of the modern world via unseen, hardworking hands.

Plant-dyed fabrics using locally foraged plants and kitchen waste (applied through heat or fermentation processes), beeswax bean casts, bronze bean casts, raspberry kvass, sourdough bread, dehydrated sourdough and dehydrated SCOBY.&#38;nbsp;
